Ingredients
- 5 ounces fresh spinach
- 1 Gala or Honeycrisp apple , thinly sliced
- ⅓ cup thinly sliced red onion
- Apple Cider Vinegar Dressing
- 1 heaping cup Candied Pecans
- 2 ounces crumbled goat cheese or ¼ cup shaved pecorino cheese
- ⅓ cup dried cranberries
- Sea salt and freshly ground black pepper
Method
- Combine spinach, sliced apple, and red onion in a large bowl.
- Toss with some apple cider vinaigrette.
- Add candied pecans, cheese, and cranberries, then toss gently.
- Season with salt and pepper and add more dressing to taste.
