Buffalo chicken sliders

Ingredients

  • 1 rotisserie chicken (shredded (about 3-4 cups shredded chicken))
  • ½ cup buffalo wing sauce
  • ½ cup ranch dressing
  • 1 teaspoon cajun seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 packages King’s Hawaiian rolls (12 count each)
  • 8 ounces shredded monterey jack cheese
  • 3 tablespoons unsalted butter (melted)
  • ½ teaspoon Italian seasoning

Method

  1. Heat the oven to 350 F and grease a large baking dish or sheet pan.
  2. Stir the shredded chicken with buffalo sauce, ranch, Cajun seasoning, salt, and pepper.
  3. Slice the connected rolls horizontally, keeping the tops and bottoms in two slabs, then place the bottom slab in the pan.
  4. Layer cheese, buffalo chicken, more cheese, and the roll tops.
  5. Brush the tops with melted butter mixed with Italian seasoning.
  6. Bake until the cheese melts and the rolls are lightly browned, about 10 to 15 minutes.
  7. Serve warm, with coleslaw if you want extra crunch.
