- Skin-on salmon fillets

- White or brown miso
- Rice wine vinegar

Method
- Heat the oven to 400 degrees and line a sheet pan.
- Season the salmon with salt and pepper.
- Whisk maple syrup, miso, rice wine vinegar, soy sauce, and grated garlic.
- Coat the salmon with the maple-miso mixture and let it marinate while the oven heats.
- Toss green beans with olive oil, red-pepper flakes, sesame oil if using, salt, and pepper.
- Arrange salmon skin-side down on the sheet pan with green beans around it.
- Bake until the salmon is opaque and the beans are tender, about 12 minutes.
