Ginger-Dill Salmon

Ingredients

  • Salmon fillet
  • Kosher salt
  • Black pepper
  • Dill
  • Fresh ginger
  • Extra-virgin olive oil
  • Grapefruit
  • Oranges
  • Radishes
  • Avocado
  • Flaky sea salt, optional

Method

  1. Heat the oven to 325 degrees and line a sheet pan with parchment.
  2. Pat the salmon dry, place it skin-side down if using skin-on fish, and season with salt and pepper.
  3. Mix chopped dill, grated ginger, and olive oil; season with salt and pepper.
  4. Spread half the ginger-dill mixture over the salmon and reserve the rest.
  5. Bake until the fish flakes easily or reaches about 120 degrees in the thickest part.
  6. Segment or slice the grapefruit and oranges, squeezing peel juice into the reserved ginger-dill mixture.
  7. Toss citrus and radishes with the reserved mixture and salt.
  8. Serve salmon in large pieces with citrus salad, avocado, olive oil, black pepper, and flaky salt.
