Ingredients
- Onion powder
- Garlic powder
- Kosher salt
- Black pepper
- Boneless, skinless chicken breasts
- All-purpose flour
- Eggs, beaten
- Panko bread crumbs
- Parmesan, finely grated and shaved
- Olive oil or neutral oil
- Fresh lemon juice
- Lemon wedges
- Arugula
- Cherry tomatoes, optional
Method
- Mix onion powder, garlic powder, salt, and pepper for the seasoned salt.
- Slice each chicken breast in half horizontally, then pound the pieces thin.
- Season the chicken with part of the seasoned salt.
- Set up three shallow bowls: flour, beaten eggs, and panko mixed with grated Parmesan and the remaining seasoned salt.
- Coat each chicken piece in flour, egg, and then the panko mixture.
- Pan-fry the breaded chicken in hot oil until golden and cooked through, about 3 minutes per side.
- Toss arugula, cherry tomatoes, shaved Parmesan, olive oil, lemon juice, salt, and pepper.
- Serve the chicken hot with the salad and lemon wedges.
