Chicken Milanese

Ingredients

  • Onion powder
  • Garlic powder
  • Kosher salt
  • Black pepper
  • Boneless, skinless chicken breasts
  • All-purpose flour
  • Eggs, beaten
  • Panko bread crumbs
  • Parmesan, finely grated and shaved
  • Olive oil or neutral oil
  • Fresh lemon juice
  • Lemon wedges
  • Arugula
  • Cherry tomatoes, optional

Method

  1. Mix onion powder, garlic powder, salt, and pepper for the seasoned salt.
  2. Slice each chicken breast in half horizontally, then pound the pieces thin.
  3. Season the chicken with part of the seasoned salt.
  4. Set up three shallow bowls: flour, beaten eggs, and panko mixed with grated Parmesan and the remaining seasoned salt.
  5. Coat each chicken piece in flour, egg, and then the panko mixture.
  6. Pan-fry the breaded chicken in hot oil until golden and cooked through, about 3 minutes per side.
  7. Toss arugula, cherry tomatoes, shaved Parmesan, olive oil, lemon juice, salt, and pepper.
  8. Serve the chicken hot with the salad and lemon wedges.
